Have you ever had one of those recipes that is perfect for nearly every situation? My version of that is this delicious Chicken Caesar Pasta Salad.
Bringing a meal to someone who is ill or just had a baby? Perfect.
Picky eaters? Yes!
Babysitter meal? Sure!
This meal was a perfect choice for the Meal Train for our cousins and their new baby!
This Chicken Caesar Pasta Salad has it all… veggies, starch, protein. It’s served cold, so it’s a perfect make ahead meal for busy nights, too. It makes A TON so you will have plenty for leftovers, too. Everyone who I have made this for has loved it.
I make this in parts to make it really simple. Usually, I’ll make the pasta the night before so it’s completely chilled. To avoid the pasta from sticking together, I’ll coat it with some of the Caesar dressing.
The morning of, I season the chicken with salt and pepper and bake it in the oven. I like to bake it because I don’t have to watch over it. You can cook the chicken however you prefer, and you can use pre-made chicken too, or rotisserie chicken. Cut this up and then add it to your pasta. Let this chill too, and add a little more of the Caesar dressing.
Once I’m ready to serve the salad, I add the grape tomatoes, feta, lettuce, and basil. I add more dressing, to taste. The lettuce doesn’t get wilty unless you really overdose the salad with the dressing!
- 2 chicken breasts, cooked and cut up
- 1 lb. penne pasta
- 1 head romaine lettuce
- 1 package feta cheese, crumbled
- cherry tomatoes
- fresh basil, chopped
- 1 bottle Caesar salad dressing
- Cook the pasta and cool overnight, with a bit of dressing so the pasta doesn't stick.
- Add remaining ingredients, sprinkling the feta and basil on top. Add about a half of the bottle of dressing, or more to taste.
