I love a good slow cooker meal, and this sausage, peppers, and onions recipe is easy and best of all a little different.
I’m so over winter already. While I love a nice snowed-in day because of the coziness (and the baking and utter laziness of the entire day) I generally hate the rest of it. Sometimes it absolutely blows my mind that I chose to go to college in Syracuse, New York, an even colder and much snowier city!
That being said, I’m not one for traditional comfort foods. AND I HATE SOUP. I know, I know. Most people can’t believe that that is humanly possible. When it comes to comfort foods, I have to go with Italian food. These sausage, pepper and onion recipe make a perfect cold weather meal that’s easy as pie to make. Just dump everything in yoru crockpot and you’re good to go.
Thsi is similar to my slow cooker pasta sauce. The base is similar- I use Pastene Kitchen Ready Tomatoes, which are easily found at grocery stores here in the Boston area. If you can’t find these, I do know that canned tomatoes by San Marzano are usually easier to find in other areas.
Take a package of Italian sausage- sweet or spicy (or combine both if you’d like.) We like sweet in our house. Throw them in the slow cooker. (I like to use these slow cooker liners for easy cleanup.)
Cut up your veggies. I use a red onion and two peppers. Slice them up. They will soften in the sauce, so they don’t have to be uniform. Add them to the sausages.
Add the can of tomatoes and mix. Add minced garlic and salt and pepper to taste. You can also add Italian Seasoning here.
Cook on low for four hours.
I serve these on sub rolls. You can toast them in the oven with butter too for some extra yumminess. If subs aren’t your thing, you can serve this over pasta or even rice.

- 8 Italian Sausages (sweet or hot)
- 1 can crushed tomatoes
- 1 tsp minced garlic
- Italian Seasoning (to taste)
- salt and pepper
- 2 bell peppers, sliced
- 1 onion, sliced
- Add sausages and sliced veggies to slow cooker.
- Cover with crushed tomatoes.
- Add garlic, salt, and pepper.
- Cook for four hours.
- Serve in sub rolls, over pasta or rice.
