I am a big fan of meal planning, and have always loved when bloggers have posted their current meals plans. Therefore, here is my first submission for Menu Plan Monday– it’s an easy back to school dinner menu!
Menu Plan Monday is run by orgjunkie.com, and she links up other blogger’s menus. It’s a great way to get ideas for your own family’s meal plan!
I’ve decided that I will post my previous week’s menu, since many times my schedule gets moved around due to all the normal craziness that comes with running a household!
We started school last week, so I aimed for easy, kid-pleasing meals to make the transition a little easier. I will provide links if there are recipes.
Sunday: White Castle Burgers: There are no White Castles in Boston, but this recipe has made its way into our regular dinner rotation because it’s delicious, simple, and my son (a big fan of burgers) loves it.
Monday: Garlic Herb Chicken with Pasta: This is another regular in our menu. It’s chicken and peppers sauteed in a garlic herb marinade and then tossed with some pasta. Easy and delicious.
Tuesday: First day of school! I went with BLTs. My kids first had BLTs this summer and loved them, so I figured we’d give them a try for dinner. I baked my bacon in the oven and just sliced up some lettuce and tomatoes– doesn’t get much easier than that.
Wednesday: Homemade pizza (store-bought dough)
Thursday: Baked Chicken Tenders– I dipped chicken tenderloins in BBQ sauce and then breadcrumbs, and baked in a 400 degree oven for 30 minutes.
Friday: Sandwiches. It was 95 degrees with 90% humidity, plus a busy afterschool schedule made simple sandwiches the way to go.
