Wow– it’s been quite a while since I posted one of my family friendly meal plans. That’s because BASEBALL. We have been on the run most weeks, making up a lot of games due to a very rainy May in Boston. On game nights, we find it tough to really get dinner going since we aren’t home until nearly 8:00. We’ve been depending on pizza, going out to restaurants, freezer items (shout out to my homeboys at Trader Joe’s!) and sandwiches. So there has not been a whole lot of cooking or fun things being made here at Casa Easy Mom Life.
Last week was a little crazy because we were finishing up baseball and dance, too. We had two nights of dance dress rehearsal, one night of practice, one night game, one day gae, and the recital. Phew.
But we are back to reality. Baseball ended Saturday. School ends Friday. I can finally start cooking again.
Here’s my family friendly meal plan for last week. Despite the craziness, I think we did well!
Sunday: Marinated chicken breasts on the grill. I used Lawry’s Herb and Garlic Marinade because I had it in the fridge, and it’s very good. As an added bonus, my husband cut up the leftover chicken and made chicken salad with it. It was so good! We both had it for lunch for a few days… the taste of the grill PLUS the marinade made it so tasty!
Monday: Sausages, Peppers, Onions & Potatoes – this is an oven meal and it was 90-something degrees here that day. Not my smartest moment, as it made the house hella-hot. Despite having central air.
Tuesday: Buffalo Chicken Tacos – My son is sick of beef tacos, so I’v been busy trying to find some decent alternatives. I’m not a huge fan of chicken tacos, so this appealed to me because I am a fan of buffalo chicken! You just throw chicken breasts in the crockpot with 1/2 bottle of buffalo sauce, and half a packet of ranch dressing. Cook for 4 hours on low. Serve in taco shells with lettuce, tomato, and ranch dressing.
Thursday: Baseball game, so we went out to dinner.
Friday: (frozen) Honey BBQ Chicken Fingers and french fries. We were cleaning the house to prep for Saturday, so we needed easy!
Saturday: My daughter’s recital, so we had people over after the show. We ordered trays of food from a local restaurant.
