Happy Monday everyone! It’s been a while, but I’m happy to be participating in Org Junkie’s Meal Plan Monday again. I like posting my previous week’s meal plan so I can tell you what worked, and what didn’t!
A couple of things I’d like to mention before I get started:
Sunday: As is common in our house on football days, we did traditional football food appetizers– frozen chicken bites (Buffalo style, of course,) among others. We were so excited that our Pats won and are off to the Superbowl!
Monday: Honey Mustard Glazed Chicks in a Blanket from Chef in Training... These are so, so good. My son LOVES these– they are chicken tenderloins wrapped in bacon, and then you make an easy honey mustard sauce to cover them with. YUM. We have made these a bunch of times. Chef in Training is one of my favorite recipe blogs– everything we have tried there has been delicious.
Tuesday: BLTs– how did my family get so lucky? BACON TWO NIGHTS IN A ROW? This is a great, quick dinner.
Wednesday: Butter Chicken from Cookies in Cups… another great one that I’m sure I’ve mentioned here on the blog. Chicken dipped in eggs and then crushed Ritz crackers, topped with chopped butter and baked. Easy and delicious.
Thursday: Takeout – my son had a basketball game and we wanted to try a new takeout place in town.
Friday: Leftovers from takeout! 🙂
Saturday: Chicken, Broccoli & Ziti from Foody Schmoody… I’ve attempted to make chicken, broccoli & ziti on my own before with mediocre results. FoodySchmoody’s version was AWESOME. The only thing I did differently was that I didn’t use cornstarch on my chicken– I was out, so I just put them in naked with just some salt and pepper. So. damn. good.
