Happy Monday, everyone! I’m looking forward to a great, but busy, week ahead! I’m finally posting my family friendly meal plan for last week– I’ve been a little lapse in posting these just due to scheduling craziness. It’s going to only get more difficult as baseball is starting for my son! I was happy, though, to get a bit more cooking in last week and am happy to share the recipes below if you’re looking for some family friendly meals.
This week is a little more busy. I’m running Teacher Appreciation Week at our school, and we’re doing a treat for teachers each day! We’re doing: Breakfast on Monday, Taco Tuesday, Cupcakes on Wednesday, Appetizers on Thursday, and Ice Cream Sundaes on Friday. It’s a fun event, and the teachers seem to really like. It’s super easy to execute, because there are so many little things that parents can contribute even if they’re not available during the day.
Here’s my meal plan:
Sunday: Crockpot Sausages and Peppers – this is one of my recipes that I posted last month. It couldn’t be easier– totally set it and forget it. I served them in sub rolls
Monday: Taco Casserole – This might be my daughter’s favorite meal that I have in my rotation right now. We omit the beans because we aren’t fans, and I use lean ground beef instead of turkey. Also, I was being a little too over-confident when I made this and totally messed up the taco mixture by adding water, too. I thought it would be a disaster, but it was just as delicious as usual. Meal that my kids like and that I can’t mess up? Perfect.
Tuesday: Cheese Ravioli with my Slow Cooker Pasta Sauce. I use store-bought ravioli. My favorite frozen (which I usually use) is Mama Rosie’s, and my favorite fresh is Buitoni.
Wednesday: Homemade pizza – I use store bought dough for this (not a pizza crust or anything like that, actual dough.) I use Pastene Kitchen Ready tomatoes, shredded mozzarella, drizzle with olive oil, salt and pepper. I make two pizzas, and one of them has pepperoni too. Bake in the oven at 450 or so. I use a crisper style pan, but I really want to try using a pizza stone. Hope to get one soon!
Thursday: Out to dinner. Our neighbor got a gift card for a local restaurant, which was awesome.
Friday: Melt in Your Mouth Chicken – I love this recipe. It’s super simple, delicious, and part of my regular dinner rotation. Fridays are crazy in our house with activities and just end of the week exhaustion, so to make this meal even easier, I buy chicken cutlets (they’re breasts cut into cutlet form, not breaded or anything.) I always pound my chicken thin, but this allows me to skip a step.
Saturday: Steak Tips – Our grocery store has some really good pre-marinated steak tips, so those are an easy, go-to meal for us. We grill them.
