Happy Monday everyone!
It’s been a rough week at our house. The stomach bug hit with a vengeance. Both kids down for the count– luckily, not at the same time. My husband and I are hoping that the grape juice trick works for us. Keep your fingers crossed.
Needless to say, meal planning wasn’t much of a priority this week.
Sunday: Baked Ziti – I boiled ziti to very al dente, and layered with my sauce and ricotta cheese (mixed with one egg, romano cheese, salt, pepper, and parsley.) Covered with mozzarella and baked for 20 minutes. It was amazing.
Monday: French Dip Sliders – so good! Definitely adding to our dinner rotation. My 9 year old ate 5 of these!
Tuesday: Valentine’s Day– we went out to dinner, with the kids, nothing romantic. My son had an orthodontist appointment, so we ate at the 99.
Wednesday: Homemade pizza. I’ve been trying to make my own dough, this time around was not a success. Back to the drawing board!
Thursday: Stomach bug day #1. Survival mode. Leftovers.
Friday: Taco Casserole – my whole family loves this recipe. I omit the beans because we aren’t fans, and I use ground beef instead of turkey.
Saturday: Stomach bug hit my daughter, so leftovers again.
