Hello! I’ve been on a little hiatus as of late, with back to back illnesses putting me behind on what feels like all of my responsibilities! I feel like this is often our busiest time of year, and I almost always am sick from all the running around, hayfever business that is in the air in the Fall.
I didn’t cook much last week, but here is what I did make:
Sunday: Pats game, so we went to watch the game at our friends’ house. I made my delicious buffalo chicken dip– recipe to come later!
Monday: Meatloaf– this is my mom’s recipe, and also one I plan to post here.
Tuesday and Wednesday: Both nights were crazy busy, so we had leftovers.
Thursday: Baked chicken tenders
Friday: Crockpot Bourbon Chicken
Saturday: I met friends for dinner, so I made Crockpot Chicken Tacos for my husband and kids. 2-3 chicken breasts, sprinkle with taco seasoning and a jar of salsa, cook in the crockpot on low for 4 hours. Serve like you would tacos!
