Hello all! I am happy to be back, as my posting has been pretty sporadic lately. We seem to have been hit with plenty of illnesses, more than we ever do, since school has started. Hoping to be finally back on a routine this week. I’m back with my easy meals plan for the week.
But anyway, HAPPY HALLOWEEN! I can’t believe we’re already at the end of October– how did that happen??
My son has been sick so it’s unlikely that he will head out tonight, but wanted to share their costumes this year… he can dress up at home, right?
My son is 9, and of course, now the cool costume has to be scary:

My 6 year old daughter is going to be a movie star.
Sunday: Sunday means football in our house, and we had family over so we did some fun appetizers from Trader Joe’s. Our favorites: Mini Beef Tacos, Mozzarella sticks, Pastry Bites with Cheese and Caramelized Onion, and of course chips and salsa.
Monday: SkinnyTaste’s Balsamic Chicken with Roasted Vegetables. This is one of my husband’s favorite meals, and it’s great because everything is cooked in one pan, so it’s easy cleanup. I prefer to use a roasting pan for this, and we eliminate the mushrooms.
Tuesday: Trader Joe’s Corn Dogs – my son had a doctor’s appointment so we had limited options! They didn’t love them, so we won’t try these again.
Wednesday: Homemade pizza- I plan on a post on this as well, but my homemade pizza is very simple– store-bought dough, Pastene Kitchen Ready tomatoes, mozzarella, olive oil, pepper, parmesan cheese. I also make a small pepperoni pizza for my pepperoni-loving little lady.
Saturday: Butter Chicken from Cookies & Cups. So good and so easy.
