This super easy baked sausage, pepper, onions and potato dinner is not only delicious, but it’s also a one pan meal, perfect for easy cleanup!
There is nothing I love more than an easy, delicious, quick meal that everyone in my family loves. No complaints. No whining. Everyone eats it.
This is one of those meals.
We love eating Italian sausage on the grill over the summer, so this gives us our fix during the winter months. It’s quick to put together, has great flavor, and serves as the perfect weeknight dinner.
I use russet potatoes for this, and I cut them really small, just to shorten the cooking time.
For peppers, I typically use two good sized peppers, but this time around I had baby bell peppers– they were so cute! And who doesn’t love a cute vegetable, am I right?
Next, cut up your sausages. We like sweet Italian sausages for this recipe. I cut each sausage into thirds. I buy an 8-pack.
Next, add your onion. I peel one good sized red onion and cut into chunks. Even if you don’t like to eat the onion (my kids don’t,) it adds so much flavor.
Next, drizzle olive oil over everything and mix. I probably use 1/8-1/4 cup, probably closer to an 1/8 cup. Just make sure everything has a thin coat of oil. Then I add salt and pepper to taste. Lay it all out on a baking sheet.
Bake for 40 minutes at 400 degrees.
I love this meal. I love how everything just roasts up nice and crunchy in the oven!
- 1 pkg Italian Sausage, each sausage cut into thirds
- 1 red onion, peeled and chunked
- 2 russet potatoes, peeled and cut into small pieces
- 2 bell peppers, cut and chunked
- salt to taste
- pepper to taste
- olive oil
- Combine all ingredients. Olive oil should be just enough to cover everything.
- Bake on baking sheet in a 400 degree oven for 40 minutes.
